The "Hey Siri" voice command is a great way to be able to use the Apple Watch hands-free. All you need to do is raise your wrist (or activate the screen) and say "Hey Siri" and then say your command. So far, in my experience, it's been a hit or miss.
The other way to activate Siri on Apple Watch, is by simply holding down the Digital Crown for a couple of seconds.
Siri's voice command option means that Siri is always listening for the command every time the watch face switches on. If you don't regularly use Siri - or just don't mind pressing the Digital Crown, you can switch off the 'Hey Siri', voice command and maybe even say an extra bit of battery life.
