When you crop an image in the iOS Photos app, you're not actually replacing the original file -- you are really creating a double with the new edits. However, you can only see the new edited photo. This means, you can actually undo the cropping you made to a photo.
To Un-crop an image you have edited in the Photos app:
- Select the Photo.
- Tap 'Edit'.
- Tap the crop tool button.
- Then tap, 'Reset'.
